It resembles the consistency and texture of spaghetti but with fewer carbs and much fewer calories. 1 cup of Spaghetti Squash only has 42 calories and provides the added benefits of Fiber to keep you feeling full and Vitamin C, a very powerful antioxidant.
Ingredients:
• 1 (2lbs) spaghetti squash, halved stem to blossom end, seeded
• ¾ cup parmesan cheese
• ¼ cup chopped fresh parsley
• black pepper to taste
• red pepper flakes (optional- for added kick!)
Directions:
1. Place one squash half, skin side up (one half at a time) on microwave-safe dish; cover with microwave-safe plastic wrap. Microwave on high 10-12 minutes until tender. Let rest, covered with plastic wrap 10-12 minutes until cool to handle. Repeat with other half.
2. Run lines of fork lengthwise over cut surface of squash to loosen spaghetti-like strands; scoop strands into serving bowl.
3. Toss with cheese and parsley; season to taste with black pepper and red pepper flakes.
